The good news: I am not as sore today as I was yesterday so I don't walk like Frankenstein. The bad news: I have another workout tomorrow with my trainer, who I affectionately call "The Frau"!
Moonie is out today so it's very weird in the studio. I hope he feels better and can be here tomorrow - although I enjoy the quiet.
I'm trying to cook instead of relying on frozen ready-made meals. They seem to be more satisfying but I'm running out of clever ways to make chicken!
Maybe a portabello mushroom sandwich tonight before the cardio....



Go to Target get a package of Gold’n Plump split chicken breasts or tenders, 3 or 4 packages of Shallots, some baby carrots and if you like potatoes(I prefer rice).
MikeSalt and pepper the chicken then seer it in a pan with a couple table spoons of olive oil. Just enough to brown it a bit. Put the chicken in a 13x9 baking dish. Peel the shallots and cut them in half and add the carrots and Shallots to the dish. You can add potatoes sliced into quarters if you like but I recommend nuking them a few minutes first or they may end up a bit rare. Now add a cup of olive oil and stir it all to get everything coated good. I usually add just a little water too. Sprinkle with as much thyme and sage as you like and cover with foil. Bake in preheated for 90 min at 350.
